One of the best eating fish on the planet is the Mahi Mahi (Coryphaena hippurus). This is one of the most prized sport fish that anglers are after for its luscious white meat. I am sure you have heard it by another name, those include mahi, dorado, dolphin, common dolphin, or bull. It is known as the dolphin fish because often you will find it swimming next to your boat. I’m sure you are wondering where the name mahi mahi comes from? It is of Hawaiian origin and means “strong strong”.

Mahi has one of the fastest growth rates of all fish. This keeps the numbers of fish high. On average you will catch fish anywhere from 5lbs to 10lbs but every now and then you will catch a large bull mahi mahi that could be 70+ lbs. They are found throughout tropical waters and often found schooling under debris. They have a unique skin pattern that makes them one of the easiest recognizable and one of the prettiest fish to catch. The mahi-mahi often have iridescent blue-green and gold patterns that are unique and used as camouflage in the open water.

The skin color is a good indicator of the freshness of meat. The brighter the colors are on a fillet often the fresher the meat. When shopping for mahi you will find it being sold in fillets or steaks that are perfect for mahi-mahi recipes. The meat of the mahi should be pink to beige in color. Any portions of the fillet or steaks that appear to be darker in color tend to have a stronger fish taste. We suggest removing these areas and any skin before cooking or grilling.

The texture of cooked mahi mahi is white and with large flakes. It is a pretty firm texture fish, which is why many people like to grill it. Mahi Mahi Tacos Recipe #1: My-Oh-Mahi Tacos

One of our favorite and easiest mahi recipe is the amazing mahi fish tacos. It is easy to prepare for the average cook. Theses tacos will have your friends and family begging for more. Let's take some time and go through the directions on how to make this wonderful mahi mahi recipe.

The first thing to do is to start by preparing the fish. If this is something fresh off the boat like we catch then you will have to fillet out the Mahi. After the Mahi Mahi is filleted proceed by cutting the fish into 1-ounce strips. You may want to weigh your first strip then eyeball the rest. Once you have completely stripped your fillets, it is time to bread them. We recommend you bread with flour, lightly beaten eggs with water, and season it with bread crumbs. This can be achieved by covering the Mahi Mahi in flour, placing it in the eggs, and covering with breadcrumbs. Now your fish is ready to deep fry. You can preheat your oil to (375 degrees F). Place your mahi in the oil and leave until it has a light brown coating. Drain the Mahi on a paper towel and season with a pinch of salt.

Now that the fish is ready it is time to prepare the sauces. The pink chili mayonnaise is always a spicy favorite. Let the blender be your friend. Place your chipotles in the blender and blend away. Puree them until they are completely smooth in texture. Add your sour cream, mayonnaise, and adobe sauce, and lemon juice. Place the blender on high. Once the texture of the sauce is creamy season it with a little salt and pepper and a pinch of chili powder for some added heat.  Always refrigerate this until it is ready to be eaten.

The mango-radish salsa is a little trickier to make.  Peel your two mangos and dice it into small pieces.  Cut up 4 to 5 red radishes and dice them into small pieces. Dice one small red onion as well. Add all these to a large mixing bowl and mix together.  Add 1 tablespoon of chili powder, ½ bunch of chopped cilantro, ¼ cup extra virgin olive oil, and some salt and pepper. Mix all this together and you are ready to serve. Squeeze your limes over this to give it that little bit of flavor that it needed.

Ingredients for mahi tacos:

·      2 pounds mahi fish (skinned, boned and cleaned) cut into 1-ounce strips

·      2 cups all-purpose flour

·      3 eggs, lightly beaten

·      4 tablespoons water

·      2 cups panko bread crumbs

·      Kosher salt and freshly ground black pepper

·      Vegetable oil, for frying

·      1/2 head savoy cabbage, finely shredded

·      1 bunch cilantro, leaves picked

·      1 bunch chives, chopped

·      3 limes, cut into wedges for garnish

Pink Chile Mayonnaise:

·      1 cup sour cream

·      1 cup mayonnaise

·      3 chipotles in adobo, plus 2 tablespoons of adobo sauce

·      1/2 lemon, juiced

·      Kosher salt and freshly ground black pepper

Mango-Radish Salsa:

·      2 limes

·      2 mangoes, diced

·      4 to 5 red radishes, diced

·      1 red onion, diced

The first thing you will want to do is make the ginger glaze. Mixing the soy sauce, honey, balsamic vinegar, garlic, ginger root, and olive oil together in a bowl makes the glaze. Lay the fillets out and remove the skin from one of the sides. Cover lightly with salt and pepper. Place the fillets and glaze in the gallon zip lock back and place it in the refrigerator for an hour to marinate.

After the fillets have been marinated heat some vegetable oil in a frying pan and place the fillets in it. Deep-fry the fillets until they are golden brown and flakey white.

The frying process usually takes 3-5 minutes on each side. They should only require one turn. After the fillets are finished pour the remaining marinade into the pan and heat until it reduces to a glaze consistency.  Pour glaze onto fried fish and serve with your favorite rice and vegetables.

The first thing that must be done is to combine the water, lime juice, and sugar into a pan and boil it on low heat until it caramelizes. Stir in garlic, pepper, and red chili once it is a deep amber color.  Remove from the heat then add the fish sauce and water. The glaze is completed and will be added to the fish when it is ready to be cooked.

De-skin the mahi and cut it into strips for cooking. Mix sesame oil and red curry powder together and toss the fish in it. The fish should be cooked in a skillet or on the grill. Our preference would be on the grill! The mahi-mahi should take about 3-5 minutes on each side. After it is finished cooking drizzle the caramel sauce that you made earlier. This gives the mahi that excellent flavor that will have all your friends talking about it. 

Now that the fish is made we need to create the spicy mayo that will top this dish off. Take your mayonnaise and mix in some Thai red curry paste. Once this has a good orangish tint it will be ready for bread placement. The last condiment that needs making is mayonnaise mustard. Mix some sriracha into yellow mustard. Once all this is down the sandwiches will be constructed.

Take a fresh baguette roll and slice in half. Place your mayo on one side and the sriracha mustard on the other. Place your mahi mahi on the side with the mustard. Drizzle some more of the caramel sauce that you prepared earlier. Slice some jalapenos, cucumbers, and onions. Place all these on with some spinach and fresh-cut carrots. Top it off with a fried egg.

•                1 pound wild-caught, skin on

•                3 tablespoons sesame oil

•                1 tablespoon Thai red curry paste

•                1/2 cup granulated sugar

•                1 lime, juiced

•                1 tablespoon water

•                1 red chile pepper (I used a large serrano pepper)

•                1 tablespoon fish sauce

•                fresh pepper, taste

 

Spicy Curried Mayo

•                1/2 cup mayo (I used olive oil mayo)

•                1-2 tablespoons Thai red curry paste

 

Siracha Mustard (optional)

•                1/4 cup grainy mustard

•                3-4 teaspoons Sriracha

 

To assemble

•                1 french baguette, toasted + cut into fourths

•                4 tablespoons soy sauce

•                2 tablespoons chile oil

•                1 bunch cilantro

•                2 jalapenos, sliced

•                1 cup picked carrots*

•                1 cup picked daikon*

•                1 cucumber, sliced thin

•               4 eggs, cooked to your liking

One thing that my girlfriend loves to make on a regular basis are sliders. Sliders fit well into our diet because it is small portioned and less filling than a huge burger. She likes to get creative every now and then by making veil sliders, lamb sliders, and even shrimp sliders.

After a long day of work, I came home to a new type of slider. This time she outdid herself. She found this great mahi mahi recipe on the internet and it has become one of my favorite mahi mahi recipes and dish to make. If a coconut shrimp and a grouper sandwich had a baby, it would be the world-famous Coconut crusted mahi mahi sliders.

These are relatively easy to make and take very little preparation time. Get a large bowl and mix panko breadcrumbs and sweetened shredded coconut together. Cut the mahi into 2-ounce squares and soak it in the eggs. After its good and coated place, it in the breadcrumb/coconut mix until the outside is completely coated. Place on a large baking sheet and place in the oven preheated to 375F. Allow the fish to cook for about 20 minutes until they are golden brown and cooked throughout. While the fish is cooking mix the sriracha, garlic, cumin, lime juice, salt, and mayo together. Slice your mango and avocado in small chunks for placement on burgers. Spread the lime mayo mix onto the slider buns. Coat both sides with mayo. Place the mahi-mahi square and top with avocado and mango chunks.

Ingredients for mahi recipe:

·      1 pound center-cut mahi, cut into two-ounce portions

·      2 egg whites

·      ½ cup panko breadcrumbs

·      ½ cup sweetened, shredded coconut

·      ¾ teaspoon salt, divided, plus more for seasoning

·      8 tablespoons light mayo

·      8 teaspoons lime juice

·      ¼ teaspoon cumin

·      1 garlic clove, grated

·      ½ teaspoon sriracha

·      1 avocado, diced

·      1 mango, diced

While the fish is cooking chop your mangos, tomatoes, onions, jalapenos, and cilantro. Mix all together and add lime juice to bring it all together.  Place the mahi in the lettuce wraps and cover with your mango salsa to enjoy as a delicious appetizer.
